There’s something about focaccia that feels effortlessly impressive. Maybe it’s the golden, dimpled top… or the way it somehow disappears within minutes of coming out of the oven.

This version is one I keep coming back to—soft, airy dough layered with sautéed leeks, garlic, fresh herbs, and pockets of melty cheese. It’s simple, but it feels special (which, in my opinion, is the sweet spot of baking).

Also worth noting: if you’ve never cleaned a leek before… consider this your gentle warning. They hide a lot of dirt. So clean… clean… and clean again… We’re not bringing that energy into our focaccia.

There’s just something about baking that keeps pulling me back in.
